Summer may quickly be coming to an end (sad face), but before that first autumn chill hits the air, I plan to spend as much time as possible outdoors with friends, preferably while eating tasty treats. So if you're a picnic lover like I am or just like having people over for snacks and a drink, today's post is for you. I've partnered with Evoolution to bring you three easy, ridiculously-yum summer recipes to try— happy snacking!

WATERMELON, FETA + BASIL BITES


WHAT YOU'LL NEED:
Watermelon, cubed
Feta cheese (preferably pre-cut)
Fresh basil
Toothpicks

DIRECTIONS:
1. Cut up watermelon into bite-sized cubes.
2. Drain the feta from container and cut basil leaves into small strips.
3. Using the watermelon chunks as a base, top with fresh basil and pieces of feta cheese. 
4. Skewer each watermelon stack with a toothpick to keep everything intact and drizzle with a generous amount of strawberry balsamic vinegar— delish!

TRUFFLE POPCORN


WHAT YOU'LL NEED:
Popcorn (stovetop or microwave, unflavoured)

DIRECTIONS:
1. Pour two to three tablespoons* of the butter oil onto the popcorn and mix thoroughly.
2. Add the same amount of black truffle oil to the mixture, and top with a sprinkle of black truffle sea salt.
3. For a fancy twist to this recipe, top your popcorn with dried parsley flakes and shredded parmesan cheese— it's magical!

*These measurements were suggested based on the popcorn serving we made (approximately one cup of kernels popped on the stovetop). We recommend moderating the proportion of oil used in this recipe based on the amount of popcorn made.

ESPRESSO + BLOOD ORANGE ICE CREAM SUNDAES


WHAT YOU'LL NEED:
1 pint of Vanilla bean ice cream
Pink Himalayan Sea Salt

DIRECTIONS:
1. For option one, scoop your desired amount of ice cream into a bowl and top with a generous amount of the espresso-flavoured balsamic vinegar. Top with chocolate shavings for extra decadence.
2. For option two, drizzle one-to-two teaspoons of the blood orange olive oil over your ice cream— this one is extra decadent, so don't go overboard with the oil. Top with a sprinkle of pink himalayan sea salt, and your friends will never want to leave your place again. xx
